The viral feta eggs trick is simple: crumble feta into a hot pan, let it melt and fry until the edges turn into a golden, salty crust, then crack eggs into the middle. The trick here is one more step. Lay a tortilla on top while the eggs finish and press it down, and the feta glues it on, so you can flip the whole thing and fold it like a quesadilla.
You end up with a wrap that’s crisp on the outside, with frizzled feta, runny yolks and whatever fresh things you have on hand. It takes about as long as making toast, and it’s more fun to eat.

Method
Step 1: Melt the feta
Brush a 10-inch nonstick skillet with half the oil and set over medium heat. Scatter ¼ cup feta in a ring about 7 inches across. Cook for 1–2 minutes, until it melts, bubbles and the edges start to turn golden.
Step 2: Fry the eggs
Crack 2 eggs into the middle of the feta ring. Sprinkle with half the Aleppo pepper and some black pepper. Cover and cook for 2–3 minutes, until the whites are just set and the yolks still soft.
Step 3: Press on the tortilla
Lay a tortilla on top and press it down firmly with a spatula for 30 seconds so the feta sticks to it.
Step 4: Flip and crisp
Slide the spatula under the feta and flip the whole thing, eggs-side up. Cook for 1 minute, until the tortilla is crisp and spotty. Slide onto a plate and repeat with the rest of the oil, feta, eggs and tortilla.
Step 5: Fill and fold
Top one half of each with spinach, avocado, tomatoes and dill, add hot sauce, then fold over and cut in half.
Good to know
- Let the feta brown before the eggs go in. If you rush it, you get soft melted cheese instead of the crispy crust that makes this work.
- A lid matters: it sets the tops of the whites before the feta burns underneath. Any lid or a sheet pan over the skillet works.
- Blot very wet feta on a paper towel first; brined feta packed in liquid spits and won’t crisp as well.
Swaps
- Flour tortillas
- Large corn or gluten-free tortillas; warm them first so they fold without cracking
- Feta
- Shredded halloumi, cheddar or a vegetarian-rennet parmesan, which all crisp nicely
- Avocado and tomato
- Pickled red onion, sliced cucumber and a spoonful of hummus
Questions people ask
What are the viral feta eggs?
They’re eggs fried on top of a layer of crumbled feta, which melts and crisps in the pan. They were popularized on TikTok, often served on toast or in a tortilla.
Does feta melt?
Not into strings like mozzarella. It softens, bubbles and then browns into a crisp, lacy layer when fried, which is exactly what you want here.
How do you keep a tortilla from getting soggy with eggs?
Cook the eggs until the whites are fully set before adding the tortilla, then give the tortilla a minute directly on the hot pan so it crisps.
